It's like this: he isn't doing the standard block. He's doing a special block that requires an exact precision timing, which is further broken up by the small delay caused by each parry move. His health bar is on the left in the above video, you can see that it drops down to near zero so any regular block will cause the rest of the hits to do just enough damage to KO him.
